“Taco Tuesdays” Block Party Tacos

Standing over 7 feet tall, Tacko Fall blocks more than his fair share of shots. These mini, bite-sized tacos are great for serving at your own block party!

Ingredients:

12 oz. pkg. Lightlife® Plant-Based Ground

1 Tbsp. vegetable oil
2 tsp. ground cumin
2 tsp. smoked paprika
1 tsp. garlic powder
1 tsp. onion powder
½ tsp. dried oregano
½ tsp. ground coriander
Pinch cayenne pepper, optional
1 tsp kosher salt, plus more to taste
2 tsp freshly-squeezed lime juice

15 3” corn tortillas (street taco size; alternatively, use a 3” cookie cutter to cut small rounds from larger tortillas – save the scraps to toast up for taco salads and soups!)

1 cup white onion, minced
Fresh cilantro, finely chopped

Salsas, hot sauce, for serving

 

Preparation:

Mix the cumin, paprika, onion and garlic powders, oregano, coriander, cayenne, and salt in a small bowl, set aside. Heat a large nonstick skillet over medium-high heat.  Once heated, warm the tortillas for 30 – 45 seconds per side, working in batches, then set aside. In the same skillet, add the oil.  Once heated, add the 12 oz package of Lightlife Plant-Based Ground, breaking it up with a wooden spoon. Cook for 1 – 2 minutes, stirring occasionally, continuing to break up any large pieces. Stir in the seasoning, and continue to cook for another 5 minutes, reducing heat to medium if the pan is getting too hot. Season with additional salt, if needed.  

To assemble the tacos, divide the filling evenly between the tortillas, top with onion and cilantro. Serve with a variety of salsas, such as salsa verde and pico de gallo, and hot sauce.
