Asian-Inspired Lettuce Wraps

1 pkg. Lightlife® Plant-Based Ground

1 Tbsp avocado oil

1 medium yellow onion, small diced, about 1/2 cup

1 clove garlic minced

1 inch fresh ginger, finely minced

1 tsp rice vinegar

2 tsp lime juice

2 tsp soy sauce

2 Tbsp gochujang, Korean red chile paste, or miso paste

1 tsp brown sugar or coconut sugar

⅛ tsp salt

3–5 cranks freshly ground black pepper add more to taste



4-6 leaves bibb lettuce plus more for wrapping

⅛ cup cilantro leaves only

1 radish, thinly sliced

1 cup white sticky rice cooked

2 Tbsp kimchi, thinly sliced

1 lime, cut in 4 wedges



1.    Heat oil in a large skillet over medium heat. Add the onions and cook until softened (a little color is okay), about 3 minutes.

2.    Add the garlic and ginger and cook for 1–2 more minutes. Add the rest of the ingredients and the Lightlife Plant-Based Ground. Cook, breaking it up with a wooden spoon and tossing occasionally, until the protein is cooked through, about 5–7 minutes.

3.     Serve the Lightlife Plant-Based Ground mixture on the lettuce leaves, and pile on the garnishes!
