Champion Style Grilled Corn Tacos

Ingredients:
Corn:
1 tbsp olive oil
2 ears of corn, shucked
½ tsp salt
½ tsp pepper
juice from one lime
1/8 tsp cayenne
Tacos:
1 tbsp olive oil
2/3 cup water
1 oz taco seasoning packet
8 corn tortillas
2 avocados, pitted & sliced
1 jalapeno, sliced thin
optional toppings: fresh cilantro, hot sauce
Preparation:
Turn your grill or grill pan on high heat. While grill is heating, brush your corn lightly with olive oil. Add corn to grill and cook for about 10 minutes, turning often, until most parts have a light char. Remove from heat and let cool. Once cool, cut corn off the cob and place into a bowl. Mix with salt, pepper, lime juice and cayenne. Set aside.
Heat olive oil in a pan on medium high heat. Add Smart Ground and break up into crumbles. Cook for about 5 minutes, stirring frequently. Heat your water in a microwave for 30 seconds. Then mix in your taco seasoning packet. Add mixture to skillet with the ground. Mix until well combined.
In a cast iron skillet or directly over your gas stove flame, heat up your tortillas on medium high heat, one at a time.
Assemble your tacos with the ground, corn, avocados, jalapeño, cilantro and hot sauce.
