The Jacobite Burger

Ingredients:
1 Lightlife® Plant-Based Burger, salt and freshly ground pepper to taste
1 milk bun or bun of your choice, lightly toasted
1/2 cup baby arugula
1 slice ripe heirloom tomato
3/4 oz. Huntsman’s cheese or plant-based blue style cheese
1 Tbsp. crispy fried onions
1 cup wedge style French fries, cooked from fresh or frozen (optional)
Marmalade
2 tsp. olive oil
2 strips Lightlife® Plant-Based Bacon
1 red onion, peeled, halved and sliced into scant ¼” wedges
1 oz. whiskey
1 Tbsp. molasses
1/4 tsp salt
1/4 tsp freshly cracked black pepper
Pickle Sauce
1/4 cup plant-based mayonnaise
2 Tbsp. capers, chopped
2 Tbsp. cucumber, finely chopped
2 Tbsp. sweet white onion, finely chopped
Instructions:
For the marmalade, heat the olive oil in skillet over medium heat. Add the red onion wedges and cook, stirring occasionally for about 8 to 10 minutes until the onions are softened and a little bit golden. Turn the heat down to low, add the whiskey, molasses, salt and pepper and cook for 1 more minute, stirring to combine. Serve warm for the burger. (Any leftover whiskey onions will keep in the fridge for a week or two.)
For the Pickle Sauce, stir together the egg-free mayo, capers, chopped cucumber and sweet onion in a small serving bowl.
To prepare the Lightlife Burger, season the patty with salt and pepper to taste. Fire up the grill to medium heat or spray a non-stick skillet with cooking spray and heat over medium heat. Cook the burger for 4 to 5 minutes per side until evenly browned and heated through.
To assemble The Jacobite Burger, spread some of the Pickle Sauce on the bottom of the toasted bun. Layer with the baby arugula and slice of heirloom tomato. Nestle on the perfectly grilled burger and then layer up with a generous spoonful of warm marmalade, the cheese and finally the crispy fried onions. Spread the top bun with more Pickle Sauce. Place the top bun on and secure the burger with a wedge style French fry on a skewer if desired. Serve while hot with the rest of the wedge fries.
