Chilli Cheese Fries

Ingredients:
For the chili:
12 oz. pkg. Lightlife® Plant-Based Ground
2 tablespoons olive oil
1 small yellow onion, chopped
1 red pepper, diced
½ teaspoon sea salt
Pinches freshly ground black pepper
2 garlic cloves, chopped
1 (14-ounce) can fire roasted tomatoes
1 (14-ounce) can black beans, drained and rinsed
3 chipotles + 3T adobo sauce from canned chipotles
1 cup water or broth
1 tablespoon lime juice
For the chili cheese fries:
1 (15-ounce) bag oven French fries
½ cup vegan cheese sauce
Desired toppings (tomatoes, jalapeños, red onion, cilantro)
Instructions:
Make the chili: Heat the oil in a large nonstick pot over medium heat. Add the onion, red pepper, salt, and pepper and cook for 5 minutes. Add the Lightlife Plant-Based Ground and cook for 7 to 8 minutes, using a wooden spoon to break up the ground as it cooks. Add the garlic, tomatoes, black beans, chipotle peppers, adobo sauce, water, and lime juice. Reduce the heat to low and simmer, uncovered, for 20 minutes, stirring occasionally, until thickened.
Bake the fries according to package directions until crispy. Serve with scoops of the chili over the fries and drizzle with vegan cheese sauce. Top with desired toppings. Save the extra chili for lunch the next day.
