Italian Mini Subs

These mini subs are perfect for a family dinner. Fancy them up by serving with their favourite classic extras. Top with hot pepper rings, pepperoncini, sautéed mushrooms, black olives or caramelized onions. Try garlic spread instead of pesto or roasted pepper spread. Give them your own twist.
Ingredients:
12 oz. pkg . Lightlife® plant-based ground
1 clove garlic, minced
1 Tbsp. fresh oregano or marjoram (or 1 tsp. dried)
1/2 tsp. salt
1/2 tsp. chili flakes (optional)
1 tsp. olive oil
1/2 cup marinara sauce
4 small sub or brioche hot dog buns, split and lightly toasted
1/4 cup prepared basil pesto
1/4 cup dairy free mozzarella style shreds
2 Tbsp. fresh parsley, roughly chopped
Instructions:
In a large bowl, stir together the Lightlife plant-based ground with the garlic, oregano, salt and chili flakes. Divide into twelve 1 oz. portions and roll into balls.
Heat the olive oil in a large non-stick skillet over medium heat. Cook the meatballs for about 4 or 5 minutes turning occasionally so they are evenly browned and cooked through. Turn the heat to low, add the marinara sauce and cook for 1 to 2 minutes stirring until meatballs are well coated and the sauce is slightly reduced.
To assemble the Italian sandwiches, spread insides of each of the toasted buns with the basil pesto. Nestle 3 meatballs and a spoonful of marinara into each bun. Sprinkle tops with the dairy-free mozzarella shreds and chopped parsley.
The sandwiches can be cut into 3 little mini meatball sliders if desired. Serve hot with extra condiments if desired.
