Pineapple Teriyaki Tempeh Tacos

Ingredients:
Slaw:
2 cups pre-shredded cabbage or cole slaw mix
2 T rice wine vinegar
Juice from a small lime
2 t maple syrup
Pinch of salt and pepper

Olive oil
1 package, Teriyaki Tempeh Cubes
4 tortillas
1 cup pineapple, chopped into bite size pieces
1 avocado, thinly sliced
1 green onion, chopped
Hot sauce (optional)
Preparation:
In a medium sized bowl, mix all slaw ingredients. Cover and place in refrigerator to let flavors meld.
Cook tempeh according to package directions.
While tempeh is cooking, heat tortillas as desired.
Assemble tacos with slaw, tempeh, pineapple, avocado and green onion. Drizzle with hot sauce if desired.
