Sweet Potato Mac N Cheese with Italian Sausage

1 package frozen Lightlife® All-New Plant-Based Italian Sausage

16oz box shellbows or similar pasta

½ red onion, diced

2 garlic cloves, minced

1 cup mashed sweet potato (for best results, roast a sweet potato and then mash it)

1 cup coconut cream

2 tablespoons nutritional yeast (optional)

1/2 teaspoon paprika

¼ teaspoon dried thyme

salt and pepper



  1. Preheat the oven to 425 degrees. Line a baking sheet with parchment paper and add the sausages. Cook for 15 minutes, turning halfway through, until browned. Slice into ¼” thick rounds. Set aside.

  2. Meanwhile, fill a medium pot halfway with water and bring to a boil. Once boiling, add the pasta and cook until al dente. Drain into a colander.
  3. While you wait for the water to boil, heat the oil in a medium skillet over medium-high heat. Once oil is shimmering, add the onions and garlic and let cook until translucent, about 5 minutes. Transfer to a blender along with the sweet potato, coconut cream, nutritional yeast, paprika, thyme, salt and pepper. Taste and adjust to your preference.


4. Combine the sauce and cooked pasta back into the pot used to cook the pasta and stir in the sausage. Sprinkle with red pepper flakes and serve.
