Spicy Soft Tacos with Cherry Tomato Salsa

Easy tacos are a great family favorite when you set out bowls of all the ingredients and let everybody assemble their own. Line up all your favorite hot sauces and let everyone pick their heat level from mild to inferno.
Ingredients:
Taco Filling
12 oz. pkg. Lightlife® Plant-Based Ground
1 Tbsp. vegetable oil
1/3 cup sweet onion, finely diced
1/2 tsp. smoked paprika
1/2 tsp. chipotle chili pepper
1/2 tsp. ground cumin
1/2 tsp. garlic powder
1/4 tsp. salt
Cherry Tomato Salsa
6 yellow cherry tomatoes, roughly chopped
6 red cherry tomatoes, roughly chopped
2 Tbsp. sweet onion, minced
1/2 jalapeño, seeded and finely chopped
2 Tbsp. fresh cilantro, chopped
1 tsp. freshly-squeezed lime juice
1/8 tsp. salt
8-6” corn tortillas, warmed
1/2 cup fresh cilantro sprigs
4 red radishes, thinly sliced
1/2 cup dairy-free queso or sour cream
Preparation:
For the cherry tomato salsa, combine the cherry tomatoes, onion, jalapeño, cilantro, lime juice, and salt in a small serving bowl. Let it marinate while preparing the taco filling.
For the taco filling, heat the vegetable oil in a large non-stick skillet over medium heat. Add the onion and sauté for 3 minutes until it begins to soften. Add the Lightlife® Plant-Based Ground and break it up with a wooden spoon into small pieces. Cook for 1 minute, occasionally stirring. Add the taco seasoning—smoked paprika, chipotle chili, cumin, garlic powder, and salt. Cook gently for another 5 or 6 minutes until flavors are combined.
To assemble the tacos, place a heaping 1/4 cup taco filling on each warmed corn tortilla, top with a heaping spoonful of cherry tomato salsa, some cilantro sprigs and a few radish slices. Dollop with queso or sour cream and fold over to eat.
