Savory Stuffed Mushrooms

Ingredients:
Olive oil
Salt & pepper
1 package, Lightlife Plant-Based Ground
¾ cup Chao Creamery Creamy Original Shreds, divided
4 oz Plant-based chive cream cheese
¼ cup Plant-based panko breadcrumbs
Preparation:
Preheat oven to 350°F.
Place mushrooms on a large baking tray. Spray or drizzle mushrooms with olive oil and sprinkle with salt and pepper. Bake mushrooms in preheated oven for 10 minutes, face down.
Meanwhile, cook your Lightlife Plant-Based Ground according to package directions. Once nicely browned, remove from heat and place in a medium sized bowl. Add cream cheese and 1/2 cup shredded cheese. Add a pinch of salt and pepper and mix everything until well combined. Scoop mixture into mushrooms. Top with remaining shredded cheese. Place back into the oven for about 5 minutes.
Remove from oven, sprinkle panko breadcrumbs on and spray or drizzle with olive oil. Place back into the oven for about 10 minutes or until breadcrumbs have browned and cheese is melted. Remove from oven and serve!
